Draw two curves on a surface (or without a surface if you don't want to!) and have the area between them filled with a mesh. You can have several curve pairs within the same curve object. You can control the mesh resolution and surface offset. If one of the curves is not on the surface (see example video), the resulting mesh will be draped on the surface (not just shrinkwrapped).
To use, first append the node tree, then create a new curve object, add the geometry nodes modifier to it (and select mesh on surface) and start drawing your curves. Every pair of curves you draw will be joined (see example video).
